Pleasant Surprise in Bourbonnais - Edit
It was a challenge finding this place among the chains prevalent in Bourbonnais, however I was glad we did. While it is a grill (with plenty of meat), they offered a selection of items suitable for vegetarians. I got a salad with baby lettuces, an avocado salsa with warm corn tortilla chips and the roasted red pepper hummus (which they kindly made for me with sliced veggies rather than pita). All were tasty. They also have a charming outdoor garden/patio.
