The Hyundai Department Store food court always has a vegan bibimbap on the menu (you may have to ask them to hold the meat and egg). The kimchi and other side dishes provided with the bibimbap are not vegan. You have to specifically ask for the "danmuji" (marinated yellow cucumber pickle). Sometimes the pop-up counter at the food court has a vegan menu. The bibimbap tastes decent and I liked the fact they added more veggies to my cup after I asked them to hold the meat and the egg. They recently introduced three vegan ddeopbap dishes (tomato basil, soybean paste, and mushroom). But it is uncertain how long these dishes will stay on the menu as they were introduced as part of the seasonal menu at the pop-up counter.
