Comforting Vegan Empanadas with Excellent Drinks 😊 - Edit
If you’re on the hunt for vegan-friendly bites and thoughtful drinks, Take It Easy Coffee is worth a stop. They offer several vegan empanadas, and I tried the mushroom one—available baked or fried—and it was excellent. Warm, savory, and really satisfying.
Read moreTheir mango sticky rice matcha, which is already listed as a specialty drink on the menu, was a standout. It was smooth, lightly sweet, and incredibly well balanced. Most of their other drinks can also be made vegan by simply swapping the milk, which is always appreciated.
Overall, this is an easy spot to recommend. Great vegan options, thoughtful drinks, and definitely a place I’d return to for both the empanadas and drinks.
