Tried a few of their vegan sushi options. Everything is clearly labeled and staff is really nice. Sushi was tasty.
According to their advertisement, they offer an all you can eat buffet every Tuesday from 6pm onwards. Best to make a reservation beforehand they explicitly state that it’s also suitable for vegetarians and vegans :).

Great vegan sushi options - Edit
It's my favorite sushi restaurant in Erfurt. They serve lots of vegan dishes including vegan salmon sushi. Everything I've tried was very delicious.
