A couple of vegan options. Tasty - Edit
Attended the Lumine Shinjuku branch on 25.7.25. There were one soup and an eggplant curry available. Some drinks (we had ginger and yuzu) and rice also. Free wifi. Friendly staff. Our curry came out with chicken (no idea how lol) but they quickly fixed it.

Curry and soup cafe. Build your own set or buy single items. This is a chain all over Japan, so it's a safe choice if you can find one.

The bread roll is vegan, but the long bread is not. And you can order rice with.
