A Wine Bar fitting of Manhattan with a delicious vegan quiche!

A lovely little upscale wine and tapas bar in beautiful Main Street, Cedaredge, Colorado. This place is off the beaten path so I was surprised, that when I asked if they had a vegan option, the owner said they keep a homemade vegan quiche on hand just for us! It’s made with a tofu/beet filling and topped with roasted carrots and asparagus and (I think) a chickpea crust. It was accompanied by a side salad of super greens with a fresh lemon balsamic vinaigrette, all for $8.50. I enjoyed it so much, I ordered a second! Add to that a glass of Montepulciano and I was in heaven. This place is straight out of Manhattan and such a treat for Cedaredge. Looks like fabulous cocktails cocktails as well.
