Delicious, but only a few options - Edit
Had a lovely dinner at Restaurant 415. The atmosphere is like a modernized mid century diner and is very cute. I was going to try the cauliflower steak as recommended here, but felt like the BBQ tofu with grilled veggies, which had an enjoyable texture and was super filling. My companion had the Woodlands pizza with vegan cheese sub, which I was also eying. I recommend both. They were also able to veganize the brussels sprouts appetizer using vegan butter and to skip the cheese.

The Wooand Pizza - Edit
The 5 dollars to sub for vegan cheese is steep, but the pizza was really good. The flavors are definitely more refined than Slyce or other nearby options. Crust was thin and had that brick fire flavor. Toppings were not sparse.

Amazing mushroom pizza! - Edit
No separate vegan menu anymore. They have vegan gf chocolate cake with chocolate frosting. We had the mushroom pizza with no cheese substitute basil. That combined with the sliced figs were wonderful! It also had chard, kale, garlic, balsamic vinaigrette reduction and olive oil. We ordered the brussel sprouts with no butter or cheese substitute the candied hazelnuts! I'm very pleased and full.

Had the blackened cauliflower which could easily be made vegan (I think the polenta May have butter usually). It was huge and delicious. A bunch of menu items could be easily modified to be vegan. Service could've been a bit better, but we came close to close so I think they were just eager to be on their way.

Service was extremely slow. Server however, was apologetic and offered a free dessert (nothing available for Vegans). I had the beet salad minus the cheese. My husband had the blackened cauliflower and kale which was good.

We recently moved to Fort Collins and are making the rounds to find new places to go and we will definitely return here. A nicer restaurant, great to take visitors to (there are vegan options, along with veg and omnivore), with a good vibe. We had bruschetta to start, amazing cauliflower steaks over polenta for our entrees and....they even had moist, delicious vegan pumpkin cupcakes for dessert! Wait staff are very knowledgeable and friendly.
