It was obvious to anyone who knows the basics of Vietnamese cuisine how to find the vægan options just by using the menu. It was not the best Pho I’ve ever had in Austin. The veggies were cooked to the perfect tenderness, and the basil was so fresh! Also: this woman’s chili sauce is BOMB! She was also so courteous and knowledgeable as to be able to inform me about whether or not the Hoisin sauce had seafood in it. I also had the springrolls. They could have been more tightly packed as they disintegrated quickly after biting in and dipping them in the peanut sauce, but maybe that was part of the plan all along because gorging oneself on the vestigial remains of sauce filled with spring roll entrails is the only kind of visceral experience that brings joy and meaning to life. Do not forget to put a generous squirt of chili sauce in with the peanuts, however. Pho Van is an excellent option for vægans with small children because you will be able to easily regulate the amount of spice according to your little one’s needs right from your own table. The kitchen manager has a well trained, industrious, and diverse staff that serves a polite, respectful, and equally as diverse clientelle that is well representative of what Austin has to show the world about the meaning of equality and inclusivity. Very clean too!
On my third visit, I had the Banh Mi. It was great! Make sure to request it without mayo, though, if you are vegan. The veggie dumplings are also p great. I like them steamed best.
