Good option for vegan substitutes - Edit
Pedal Pushers is your best bet for a vegan option in Lanesboro—they have delicious Brussels sprouts and French fries, and can veganise different menu items if you get creative. I substituted black bean burger for shrimp in the mango rice bowl and they did a great job with it.

Cute cafe in a cute town - Edit
We were camping at Whitewater State Park, and heard that Lanesboro is very nice, so we went to check it out. Decided to get take-out here. The only vegan option was the Falafel Salad. Romaine lettuce, Klamath olives, sun-dried tomatoes, and quinoa. A dressing was included, but not at all needed due to the flavorful oil on the olives and tomatoes. On the other side were five falafels with good flavor and a bit of spice, on a shallow bed of hummus. The meal was satisfying and filling. We also got French fries on the side. The fries were just okay. I wasn’t a fan. Other reviews here, say the restaurant also serves vegan sausage and Zoodles. Neither were on the menu, and the waiter hadn’t heard of these.

Falafel Bowl - Edit
The Falafel Bowl was vegan. I suppose some other things could be made vegan...

vegan sausage in rural mn!! - Edit
Fun spot with drinks and great service. Though the vegan options are limited, it’s so nice to find some good vegan food in southern Minnesota—a rarity outside of the twin cities. Loved both the brussels sprouts and vegan zoodles!
