Very nice vegan breakfast and lunch in Nuevo Vallarta - Edit
Organik was a delightful place to find in Nuevo Vallarta. They serve Acacia bowls and Poke bowls (e.g., Buddha bowl) for breakfast and lunch. Soy lattes and other coffee items are available. Service is on the slow side-- but it's worth it because there aren't many other options in the area. Note, you can walk there from the Vidanta resort via the beach.
