Decent Vegan Chinese, But Not a Standout - Edit
Old Thousand was a decent find with a couple of vegan options, though it wasn’t a standout. The fried rice was quite oily, and the noodle dish had an odd aftertaste. Nothing was bad, but neither dish really impressed me. The service was great and definitely helped make for a pleasant experience!

A great restaurant with vegan options - Edit
I got the General Tso Tofu and thought it was great. It is a more expensive restaurant ($30~ a person) but a good choice if you're looking for something besides a food truck.

I ordered the vegan fried rice and my partner had the eggplant thing and wow. My rice had a flavor profile that I couldn’t believe but the eggplant dish was phenomenal. It will drive me crazy all day and night that I cannot eat it for every meal.
