Excellent vegan food & Dutch wine

This restaurant is a gem. The concept is 80/20, meaning 80% is plantbased and 20% is meat/fish. There is no set menu, you can choose 4 to 8 courses and the chef will create a wonderful menu that changes regularly. The restaurant focuses on local, seasonal produce and zero waste. What makes this restaurant unique in the Netherlands, is that they serve a complete wine pairing with Dutch wines. All the Dutch wines are of excellent quality and the wine sommelier, Ryanne Rinsema, is very eager to tell you all about it. Executive chef, Liudger van der Meer, is very knowlegdeable about vegan food and fermentation techniques and creates the most wonderfull flavor profiles. All the dishes look absolutely stunning. The kitchen is located in the middle of the restaurant, so from every table you have a view on the kitchen. The staff is very welcoming and friendly and can clearly explain with every dish how it's made, including vegan versions of traditional non-vegan food items.
