Cool place, pure food - Edit
Not so many vegan options. The salad and the pokébowl are basically the same but very tasty.

My favourite breakfast place in Uppsala - Edit
This is a popular café in Uppsala but they have lots of tables so finding a place to sit is never a problem. They have a vegan breakfast consisting of an açaí bowl, avocado sandwich (you have to ask for the vegan version because their original avocado sandwich has philadelphia) or chia pudding and coffee/tea/juice. If you want a bigger meal there’s a vegan salad on the menu. They also have vegan cake slices and a vegan brownie.
