Excellent lunch

What a pleasant surprise this restaurant was in a small town that otherwise had a very few, poorly labelled vegan/vegetarian options. There was a starter, main course and dessert, each shown with the word “vegan” in green beside it. The starter was a local dish similar to ratatouille. The main course was aubergine in a delicately flavoured creamy herb sauce with side vegetables and hummus. Dessert was either the ubiquitous sorbet or a fruit with granola on an unusual creamy mousse base. (No photo of the starter because I wolfed it before I thought of Happy Cow reviews.) All this is a fabulous setting with vistas of the foothills of the Pyrenees.
