A solid option - Edit
Their pho is a 4 star deal but the Chinese food is only a 3 imo. The young man who usually works the counter is very good with making sure dishes can be made vegan.

They said the teriyaki was vegan, then brought out an unexpected salad with it with mayo that wasn't vegan.

Best Pho ever—Hit the spot! - Edit
The pho was chock full of veggies -mushrooms, carrots, broccoli, onions, green onions, fried tofu, Napa cabbage, cilantro topped with fried shallots and the additional sprouts, basil, and jalapeños. Nice rich broth. The spring rolls had veggies mint and large slices of tofu with a nice peanut sauce.
