Great vegan sushi - Edit
If you don't mind eating in a non-vegan place Kento has a few wonderful vegan options. I have found two stores in Valencia.

La comida está preparada y expuesta, coges lo que vas a comer, pagas y listo. No tiene muchas opciones veganas pero lo que hay es suficiente y está bueno. La sección vegana está bien identificada, así que no tiene pérdida.

The vegan options was not basic at all. I had white rice with fried seitan and vegan mayo. The food was surprisingly good compared what I have from my home country. The staff is trained well to help you out.

Good sushi place to quickly grab some sushis. The sushi they have is good, good ingredients and the rise is tasty. The staff was very helpful. And not to expensive, but also not cheap!
Read moreThey sadly only had few vegan options (cucumber, avocado, carrot, inari). Sadly no vegan miso soup which would have made it perfect.

It had just opened recently when we went there so about 4 members of staff explained what sushi was to us. All very helpful though! They had a few boxes of vegan sushi and some moschi that were vegan too. We got them to take away as we were heading to the airport, but there was a medium sided eating area too if you wanted to sit in. The cucumber maki was nice and the mixed box of vegan sushi was fresh and tasty. Handy fir a speedy take away
