Good vegan options and health food section - Edit
For Springfield HYVEE has the most options. They are reasonably priced and have a market pantry section with hundreds of well labeled vegan items. They also have organic produce and a number of items. They sometimes don’t keep things in stock but continue to revamp their items and expand the vegan market.
