Very tasty, but few vegan options - Edit
I had the vegan fajitas which were delicious. And the portion was very big. On top of that they served a lot of complimentary nachos with a nice and spicy habanero sauce.

A decent option for vegans in an area with few options - Edit
The restaurant on the ground floor of Hotel Chichén Itzá is meat-focused but can prepare a few vegan dishes on request. We had the veggie fajitas (prepared without cheese or cream), served with corn tortillas, and veganized chilaquiles (no eggs, cheese, or cream), as well as a side guacamole. All were good and satisfying. Their horchata is vegan (and unusually sweet). They serve complimentary chips and salsa before the meal, so we had plenty to eat.
