Nice burger in a great setting - Edit
The edamame burger is nice and the black bun is a good touch. The sweet potato fries are delicious too!

Decent option for mixed groups - Edit
Güterhof if definitely not focused on attracting vegan customers, still, they have clearly labeled vegan options on their menu (which is small anyways) and put a lot of effort into making their vegan customers satisfied. For our family dinner their prepared vegan desserts extra (I asked for their options in advance) and their handmade vegan burger is pretty good as well. Considering the limited options in the area a good place to go to for a special occasion. Nevertheless, I would recommend contacting them in advance if you look for something else than a burger or salad.

Vegan food isn't the main attraction - Edit
If it's just for vegan food, there are better alternatives in Schaffhausen. However if you're arriving by ship and want to enjoy the view of the river, this is the perfect place and offers you a decent selection of vegan items. The interior itself is spectacular with huge ancient beams.
