Tasty and reasonably priced - Edit
You can build your own bowl like at Chipotle or, in my case, I chose the stock vegan BIBIMBAP, which had lots and lots of ingredients and was really quite a bit of food for not that much money. The place itself is more of a takeout joint, nothing exciting to look at.

Great Value Korean/Mexican Fusion - Edit
This restaurant very much reflects the population of the area, offering a fusion of Korean and Mexican food. The restaurant itself is modern and clean. The ingredients are all very fresh and the prices very reasonable. The main item they sell is a rice bowl (or you can also have it as a burrito). You pick a choice of base (3 different rices or salad... or half & half). Then add tofu, black/pinto beans, grilled cabbage, 5 choices of toppings from a selection of 12/13 (including mac & cheese, (not vegan), guacamole and kimchi) plus a sauce.
