Solid Sushi - Edit
Fuji Sushi is a solid sushi choice around the Eagan area. I went expecting some hibachi options, but was a little surprise to find that this Japanese restaurant really does only serve sushi.
Read moreThe veggie sushi options as the stables, without much crazy creativity. But, it does the job and was a tasty dinner. I will probably visit again when I am in the area.

I surely love sushi & seaweed salad. Today I got the Maki D box (avocado roll, cucumber roll, & asparagus roll) and a peanut avocado roll with seaweed salad (More than one meal).Sure, I've had better dedicated vegan sushi, but for a chain in the community, it is consistently delicious.
