Decent Pizza & local brews - Edit
Landing in Boulder on a Monday night, not too many options, but the pizzas at Fringe were good and vegan cheese available. We had veggie and eggplant parm pizza. Not sure if the crispy eggplant actually had parm, but that was the better pizza IMHO. Ask for the hot pepper sauce - it is seriously hot!

Nothing vegan on the menu, some things can probably be veganized, there is vegan cheese option on the pizza for $3 extra.

No idea we good vegan pizza in town. They have a few on the menu but can modify others easily. The strip mall is dumpy, but it is nice inside! Highly recommend.
