Delicious veggie and vegan options - Edit
This was near our hotel in Koh Samui which was we why we ended up in a Sushi bar on our first proper night in Thailand. The staff were friendly and helpful, there were probably around eight vegan/vegetarian options, and they were all delicious. We had kimchi (fresh, crunchy and delicious), hot edamame, and a fried, crunchy vegan maki.
