Satisfies Your Ramen Craving - Edit
While it's not the most overwhelmingly flavorful ramen, it does the trick. There's only one vegan ramen option, but it has a decent variety of ingredients — tofu, bean sprouts, bamboo shoots, etc. By far, the star of the dish is the mushroom topping. It's umami-packed and delicious.
Read moreIf you're looking to scratch your ramen itch, I'd recommend this place (especially considering the vegan ramen options in the Forest Grove/Hillsboro area are slim), but expect to add a bit of salt/soy sauce/chili oil, or else you might be a bit disappointed with the flavor profile — or lack thereof.

Currently staying at my SIL’s in Forest Grove. Not too many options out here, so was excited to see that this food cart in the new(ish) pod has a vegan ramen option.

Unfortunately this was by far the blandest and greasiest version that I’ve had.
Very appreciative that they have a vegan option and of course tastes differ, so you may love it, but I was disappointed.
Pros: One clearly marked vegan option. , Cute food cart pod with covered, heated seating.
Cons: Bland and greasy
