I think they had something like 12 vegan flavors, some that I remember; banana, cheesecake, hazelnut and orange, dark chocolate, chocolate and berries, coconut, melon, pistachio, strawberry...and more!

We had cheesecake and a dark chocolate and vanilla bergamot with lime. It was really nice but i actually wanted pistacchio and they didn’t have a vegan version of that. The flavours are surprising though, really nice.

Lots of vegan options, and not only sorbet/fruit! - Edit
I visited Azzurra last week. I had more luck with the staff than others, because they were friendly and helpful when I asked them about vegan options. The place has a separate freezer booth full of vegan flavours, which include less common ones too (e.g. stracciatella, cheesecake, fruit&chocolate and pistachio - around 10 flavours altogether) AND the sorbet options in the other booth are also vegan. They have vegan cone too. I tried pistachio and cheesecake, and liked both of them, though the cheesecake tasted more like berry yogurt. I definitely would havetried other flavours too if I had the time&opportunity!

Delicious vegan ice cream, we returned several times in our week in Alghero. Great to have options. Lovely to sit outside in a courtyard. Pity the staff was unfriendly (we were speaking Italian). Would recommend
