Solid Airport Bar & Grill - Edit
While passing through the airport, we decided to stop at one of the sit-down, table service restaurants. We landed on Sweetwater as it was HappyCow listed, I enjoy the beer, and it was centrally located as we awaited our gate.

We waited less here than some quick service spots. The vegan option on the menu is limited to mostly the beyond burger.
It was an okay burger. I think it was likely baked as it was a bit tougher than most grilled beyond burgers, but the veggies were fresh and the fries were really tasty. Everything came out hot and fast.
A small bonus - they use non-plastic straws
