White Vegan Cake

    Preheat oven to 350F degrees. In large bowl, mix together flour, baking powder, sugar, and salt. In a separate bowl, combine milk, vanilla, and egg replacer. Add wet mixture to flour mixture. Mix thoroughly. Grease a cake pan. Pour mixture into cake pan. Bake for 30 minutes, or until a toothpick inserted into the cake comes out dry.
    Serve cake by itself, with fresh fruit, or chocolate sauce drizzled atop.


    1 1/2 cup flour
    2 teaspoon baking powder
    3/4 cup brown sugar
    1/4 teaspoon salt
    3/4 cup soy or oat milk
    2 teaspoon vanilla
    egg replacer equivalent to 1 egg, beaten
    optional: chocolate sauce drizzled atop

    1 cake

      to get anywhere near a 6x9 pan, you need to double this recipe. the result is a flat fast cooking cake the consistency of moist shortbread. it is not white and it is not fluffy or raised. its good, but it certainly is no "cake" substitute.
