Tomato Sauce

    Heat small amount of olive oil in a pan and add peppers, onion, garlic, and bay leaf. Cook for 5 minutes. Add tomatoes and puree, pinch of sugar. Salt and pepper to taste. Simmer over a medium heat for 10 minutes. Leave to cool. Remove bay leaf and mix with a blender.


    1/2 small onion
    1 small tin red peppers
    1 clove garlic, chopped
    1 tin of tomatoes
    tomato puree
    salt and pepper
    pinch of sugar
    1 teaspoon fresh oregano
    1 bay leaf
    1 teaspoon fresh parsley
