Tofu Stir-fry in Mali Sauce

    Instructions

    In a sauce pot, bring water to a low boil, then add peanut butter. Cook for 1 minute while stirring. Reduce heat.
    Add to the pot the sugar, soy sauce, and tomato sauce or mashed tomatoes. Stir the ingredients together and cook for 2 minutes. Remove from heat and set aside.
    In a separate pan, saute the tofu cubes with chopped onions in oil over medium-high heat. Cook for a couple minutes, until onions are soft. Remove from heat.
    Place the fried tofu on a large serving plate, and pour the hot Mali sauce over it. Enjoy!
    Note - The Mali sauce can also be served over a vegetable stir fry or baked potatoes. You can use more or less of each ingredient as you experiment and find the taste you like. Recipe inspired by cooks in Mali, West Africa.

    Ingredients

    Mali Sauce ingredients:
    3 tablespoons of peanut butter, unsweetened
    1 cup filtered water
    1 tablespoon palm sugar or raw sugar
    1 tablespoon soy sauce or tamari sauce
    1 cup tomato sauce or mashed and chopped tomatoes

    Tofu and Vegetables Fry ingredients:
    1 package of firm tofu, cubed
    1/2 cup onion, finely chopped
    cooking oil
