Spicy Lentil Quinoa Soup

    Instructions

    Add the oil. onions, carrots and celery to a pat and let fry.
    Add the garlic, curry, cumin, kurkuma, cayenne pepper and oregano and let it cook for 2-4 minutes.
    Add the potatoes, tomatoes, lentils, vegetable broth and the bay leaves. Wait until it boils properly, than reduce the heat and let it simmer for 60 minutes.
    Add some salt and the baby spinach, serve and enjoy.

    3 tablespoon olive oil
    1 onion
    2 carrots
    2 celery sticks
    2 garlic cloves
    1 teaspoon curry powder
    1 teaspoon cumin
    1/2 teaspoon kurkuma
    1 teaspoon oregano
    1/2 teaspoon cayenne or chili flakes
    2 potatoes
    800 ml tomatoes
    400 ml lentils
    250 ml quinoa
    250 ml beans
    2 liter vegetable broth
    3 bay leaves
    4 cup baby spinach
