Quick Vegan Chili

    Instructions

    Place all ingredients except onion and bell pepper in a large cooking pot, and cook on medium heat until boiling, then reduce heat to low. Saute onions and peppers in oil until soft but not brown. Then add peppers and onions to large pot. Cook for at least 20 minutes.

    Ingredients

    4 cans beans with water (black, pinto, or kidney beans)
    3 large tomatoes
    2 onions
    2 green bell peppers
    1 can corn, drained
    1 packet chili seasoning (or chili powder and salt)
    olive oil
    paprika (optional)

    Serving Size

    6-8

      I like to make this with ground soy, as well. It adds a little extra texture and protein.
