Oat Crunchies

Oat Crunchies


2 cup (500g) oats
1cup (250g) self raising/cake/brown bread flour
1cup (250g) desiccated coconut
200g sugar, syrup, or agave nectar
1 teaspoon (5g) baking soda
250g vegan margarine (or 1/4 vegan margarine + 1/4 cup sunflower oil + 1/2 cup water)
1 tablespoon (15ml) sweetner syrup like maple, molasses, or agave
4 teaspoon sesame seeds
4 teaspoon flax seeds
1 teaspoon poppy seeds
4 tablespoons high fiber
1 teaspoon kelp power
100g cocoa power


Put all the dry ingredients, except the sugar in a bowl and mix.

Put the vegan margarine or the replacement and golden syrup with the sugar in a bowl and heat in a microwave or over the stove till melted.

Add to the dry ingredients and mix well, it must be a bit sticky and not loose after mixing if loose, add a bit more melted margarine.

Place the mixed ingredients in a greased pan and press, height can be between 1.5 and 2cm high. It must be able to stick together.

Place in an oven 180 C degrees for about 15-20 minutes depending on the hardness desired. But NB once cooled it hardens further so my advice would be to switch off the oven and leave in for a few extra minutes.

Cut when taken out of the oven or it will be difficult to cut when it has hardened (cooled).

You may make variants and add other things like raisins and nuts.
