Mom's Bangin' Potato Salad

    Instructions

    Peel, cut, and boil potatoes until soft. Drain and mash until smooth.
    Mix vegan egg and scramble until cooked through.
    Dice green onion, shallot, and celery and mix with vegan egg and mayo. Add to the potatoes.
    Season to taste with listed spices.

    Ingredients

    8 yukon gold potatoes
    7 tablespoon vegan mayo
    2 vegan eggs (4 tablespoon) of Follow Your Heart vegan egg
    2 green onions
    2 celery stalks
    1/2 shallot
    Mustard
    Cumin
    Salt
    Celery salt
    White pepper
    Cayenne pepper
    Paprika
