1 head garlic
6 medium potatoes, peeled and cubed
2 tablespoon margarine or coconut oil
1/2 cup soymilk or oatmilk
salt and pepper to taste
Cut top off garlic, and brush cut part with olive oil, then sprinkle with salt and pepper.
Loosely wrap garlic in foil, and bake for 30 minutes or until garlic is soft.
Let cool, then squeeze garlic out of skins.
Steam or boil potatoes until soft. Place potatoes into a bowl and mash thoroughly. Add garlic, margarine or coconut oil, non-dairy milk.
Season with salt and pepper. Mix all ingredients well.
