Easy Couscous and Veggies

    Measure out your couscous in a heat safe container and pour boiling water over it until just covered in water. Cover with airtight lid and let sit for 5 minutes.
    Cook your vegetables until soft, then add salt, pepper, any herbs you like. Stir well to combine the flavors, then add the tomato sauce and stir again.
    Turn down the heat and let simmer for a few minutes, then serve with vegan shredded cheese. Enjoy.


    50 grams uncooked couscous (becomes 100 grams cooked)
    350 grams frozen vegetable mix
    200 grams tomato sauce
    Herbs and spices, to taste
