Chocolate Chip Banana Cookies

Ingredients

1 cup vegan margarine
1 3/4 cup tightly packed brown sugar
3/4 cup table or turbinado sugar
1 large or 2 small bananas, mashed
5 teaspoon vanilla
2 tablespoon water
1 teaspoon baking powder
2 cup all-purpose or whole-wheat flour
2 1/2 to 3 cup rolled oats
2 1/2 cup vegan chocolate chips or carob chips

Instructions

Preheat oven to 375° Fahrenheit

Beat together the margarine and sugars. Add the mashed banana, vanilla, and water. Mix well.

Slowly mix in the dry ingredients.

The final batter should be almost too dry to hold the chocolate chips. If it isn't, adjust the amount of water or oats.

Bake them for 10-15 minutes on an ungreased cookie sheet. Cookies are done when the bottom starts to
turn light brown.

Remove from the oven and let cool. Store in an airtight container, they freeze well too.
