    Preheat oven to 350° F. Grease a 9×13 pan.
    In a mixing bowl, whisk together the first 5 ingredients and let sit at least 20 minutes.
    Stir in all remaining ingredients. Pour into the pan, and smooth.
    Bake for 30 minutes or until a toothpick comes out clean.
    Let your cake rest and cool down before icing. Serve and enjoy!


    2 cup carrot, shredded
    1 cup applesauce
    1/2 cup coconut oil
    4 teaspoon white vinegar
    4 teaspoon pure vanilla extract
    3 cup oat flour
    3 teaspoon cinnamon
    1 1/2 teaspoon salt
    1 teaspoon baking soda
    1 cup coconut sugar
    1/2 cup raisins
    1/2 cup walnuts, chopped

    10-12 slices
