Butter Bean Stir Fry

1 can of butter beans
1 package (or large handful)vegetarian "chicken" strips
1/2 red pepper, diced
1/2 onion, diced
olive oil
Adobo all-purpose seasoning (to taste)
dried oregano (to taste)
black pepper (to taste)
2 cups of water
your choice of rice


Set rice to boil in the 2 cups of water. Set cooking time appropriate to type of rice.

Meanwhile, saute onion and red pepper in a bit of olive oil. Add the spices and saute until spices are fragrant.

Add beans and "chicken" strips. When hot, add to cooked rice and serve.

Note: This recipe can be altered depending on what you have on hand. For instance, try using pre-cooked black leguna lentils instead of the butter beans. This type of lentil is an excellent source of protein.
