Broccoli and Leek Quiche

    Preheat oven to 220 degrees.
    Pour walnut oil into a large pie pan.
    Stir all crust ingredients in a large bowl and blend until crumbly. Place the mixture into the pie pan and press it down with your hands or a spoon to shape it. Set aside.
    Place all filling ingredients in a food processor and mix on high speed until they are smooth. Pour the mixture on top of the crust and flatten out.
    Garnish with small broccoli pieces, chives and leek slices if desired.
    Bake for 25-30 minutes. Let it cool before serving and enjoy.


    Pie Crust:
    1 cup almond meal
    1 cup oat flour
    1 teaspoon sea salt
    2 tablespoon walnut oil
    4 tablespoon soy milk
    Optional garnishes

    1 tablespoon coconut oil
    1 leek, finely chopped
    50 grams broccoli, chopped into small pieces
    1 cup peanut flour
    2 tablespoon
