Banana Apricot Nut Loaf

Ingredients

1 cup pureed ripe apricots
3/4 cup unrefined brown sugar
2 heaped teaspoons freshly ground flax seeds mixed with 6 tablespoons of hot water
1 2/3 cup cake flour
1 teaspoon bicarb
1 teaspoon vanilla extract
1/4 teaspoon all spice
1/2 teaspoon cinnamon
2 large mashed ripe bananas
2 tablespoon fresh lemon juice
1/2 cup mixed nuts toasted on a pan
1 teaspoon nutritional yeast
1/2 teaspoon sea salt

Instructions

Preheat oven to 180ºC.

Grease a standard loaf pan with oil.

Mash, bananas, add flax mixture, sugar, vanilla and mix well with apricot puree.

Add flour, bicarb, spice mixture and salt. Mix till incorporated. Mix quickly, do not over mix.

Pour mixture in loaf pan and bake for 60 minutes. Batter must be thick such that it sticks to the spoon.
