Baked Doughnuts

    Preheat the oven to 350º F.
    Combine the flour, salt, baking powder, cinnamon and sugar in a large bowl.
    In a small saucepan add the milk, vinegar, margarine, apple sauce and vanilla extract. Place on a low heat and stir until the margarine has melted and then remove from the heat. It should be slightly warm when added to the dry mixture.
    Combine the wet and dry mixtures together, mix until it's a lump-free batter.
    Lightly grease your doughnut pans with margarine and fill.
    Cook in the oven for 12 minutes, ensuring the doughnut has cooked through (use a toothpick to check, if it comes out clean its ready). Once cooled on a rack ice and decorate them accordingly.


    1 cup plain flour
    1 1/2 teaspoon baking powder
    1/4 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup sugar
    1/4 cup vegan margarine
    1/2 cup soy or nut based milk
    1/2 teaspoon vanilla extract
    2 tablespoon apple sauce
    1/2 teaspoon apple cider vinegar
    Icing sugar
    Beetroot juice
    Lavender flavoring, butterfly pea tea (optional)
    1/2 teaspoon lemon juice
    Slivered almonds, sprinkles, freeze dried raspberries and pistachios for topping
