Apple Oatmeal Cookies

    Combine the first eight ingredients and mix well. Stir in the olive oil, rice syrup and enough rice milk to make a smooth batter. Stir in the raisins, walnuts and apples. Drop by spoonfuls onto an oiled cookie sheet and bake in a preheated oven at 350F degrees for 15 minutes or until the bottoms of the cookies are golden.


    2/3 cup rolled oats
    2/3 cup whole wheat pastry flour
    2 tablespoon dried coconut shred
    1 teaspoon allspice
    1/4 teaspoon cinnamon
    1/4 teaspoon ginger
    3/4 teaspoon baking powder
    pinch of sea salt
    2 tablespoon extra virgin olive oil
    2-3 tablespoon brown rice syrup
    1/4-1/2 cup rice milk
    2 tablespoon raisins
    1 apple, finely diced
    handful of walnuts or pecans
