Anzac Biscuits

Ingredients

1 cup oats
3/4 cup shredded coconut
1 cup flour
1/2 cup caster sugar
just under 1 teaspoon baking soda
2 tablespoon boiling water
1/2 cup coconut or mild flavoured oil
1 tablespoon golden syrup

Instructions

Preheat oven to 180° C or 356° F

Mix oats, coconut, flour and sugar in a large bowl.

Melt the oil over low heat and add golden syrup, stirring until combined.

in a small bowl mix together the baking soda and boiling water before adding to the oil and golden syrup and mix well.

Add the wet and dry ingredients together and combine.

Shape the dough into tablespoon sized balls and place on a greased baking tray. Lightly press down and bake (position the oven rack in the middle of oven) for 15-20 minutes or until golden brown. Let cool and enjoy.
