Hi, So I was wondering if anyone on here would have some good ideas for me. I have been vegetarian for 4 months and I noticed that it has been hard for me to make meals. I can follow recipes and cook very well, but coming home after a day of work, I find it hard to make myself dinner. The rest of my family is not vegetarian so usually when they have dinner, it is not something for me. I wold love to know if you guys have any quick meals, go tos, and any helpful hacks so that I can continue my vegetarian journey. Thanks!
Here's a few quick meals that I do.
-Pasta, sauce from a jar in a pan add tinned kidney beans/ lentils, few cubes of frozen spinach.
-Fast rice, frozen peas& sweet corn and pre-marinated tofu cut into cubes.
-salad, pita bread and hummus
- veggie burger, chips, veg and gravy.
