I found Hope cafe by accident while looking for another vegan restaurant. I wasn't expecting anything great to be honest because I didn't find it on any lists when I did research in advance. I'm also super picky. I was happily surprised that the food was such good quality, great flavours and presented beautifully. In the 3 days I spent in Copenhagen I went 6 times! Breakfast and dinner every day. The breakfast scrambled tofu with gluten free toast, home made mayonnaise was delicious. Vegan sandwich is so good, the vegan burger so good and let me tell you about the raw snickers bar! I wish I could have taken 4 back with me. The vibe of the place is really nice and cosy. The staff are super friendly. Its an absolute gem in Copenhagen. If I go back to Copenhagen I would have to stay at the not so great hotel I stayed at while there because it was 7 minutes away from Hope! I would have given it a 5 star rating but happy cow doesn't allow if its not 100% vegetarian, so it automatically gives 4 stars instead of 5. For me its 5 stars though!
