I had a very friendly EMT one night that I was in the ER, who, after finding out I'm vegan, insisted that I visit Simon's. His enthusiasm and kindness meant that of course I had to go! And Jason, if you ever see this, THANK YOU! I ordered the raw lasagna and savored every bite. I've made plans with a friend to have lunch there again this weekend, Simon's is a new regular for me, and it should be for everyone.
