Dear Guilherme, We would like to thank you for your feedback. It led us to speak with the team to reinforce our values: our guests’ experience is our main focus, and our goal is that everyone who visits us leaves the restaurant happier than when they arrived. We understand your frustration and apologize for not having handled the situation in the best possible way, nor for having offered a solution at the time of the incident, as is our usual standard. Our portion sizes and prices are reviewed and adjusted periodically, with several objectives in mind: minimizing waste; ensuring that a complete meal (starter, main course, and dessert) is enough to satisfy someone with a good appetite; offering competitive prices (usually lower) compared to the competition; and maintaining a sustainable business. If we notice that a dish receives unanimously positive feedback but people consistently leave part of it uneaten (which then goes to waste), we adjust the portion size downward. Likewise, if we receive repeated feedback that a portion is too small, we adjust it upward. In the specific case of the croquettes, one of the following scenarios was frequent: 1) guests who ordered the croquettes did not eat the full portion in order to keep their appetite for the rest of the meal; 2) guests ate the full portion but were then unable to finish the main course and were too full to try a dessert. For this reason, we decided to reduce the portion size. In other cases, such as the soup, the petit gâteau, the cheesecake, and all scoops of ice cream, the portion size were recently increased, using the same criteria.
