Emmy-nominated actress (and mother of two vegan boys) Mayim Bialik, with pediatrician Dr. Jay Gordon, has created a new vegan cookbook called “Mayim’s Vegan Table, More than 100 Great-Tasting and Healthy Recipes from My Family to Yours”.
We caught up with Mayim in a telephone interview, and she discusses with HappyCow’s Ken Spector her perspective on veganism and her latest book.
Mayim’s recipes range from breakfast (everything from a Green Smoothie, which sweetens vitamin-rich greens with fruit, to French Toast) to dinner (including Winter Vegetable Risotto and Build-Your-Own Black Bean and Quinoa Tacos, Breads (such as the fun-shaped Turtle Bread), sides (including Spice-Crusted Baby Potatoes with Tamarind Cream and Golden Couscous with Olives and Fresh Herbs), and desserts (such as Plum and Walnut Crisp and Dark Chocolate Peanut Butter Pie).
Mayim also combines her Jewish heritage with vegan nutrition to produce recipes such as Matzoh Ball Soup and Rugelach.
Dr. Jay Gordon chimes in throughout the book, providing essential information and interesting facts about vegan nutrition and growing bodies.
