Spicy Vegan Pho

INGREDIENTS
1 pack rice noodles, pre-soaked for 7-10 minutes
3 garlic cloves, minced
4 cups vegetable broth
1 cup water
1/3 cup soy sauce
1/2 tsp black pepper
1 tbsp garlic powder
1/4 tsp ground ginger
1 tsp rice vinegar
1/2 cup tofu, cubed
cilantro, seaweed, hot sauce, lime – to taste

DIRECTIONS
*presoak your rice noodles in hot water for about 7 minutes*
• sautee garlic in just enough vegetable broth (or water) to cover the bottom of pan
• add vegetable broth, water and soy sauce – allow to boil
• add black pepper, garlic powder, ground ginger, rice vinegar and tofu – bring to a boil
• add rice noodles and top with preferred condiments
