We dined here with non-vegan friends to celebrate us being 10 years vegan. We loved the food, the presentation, the open kitchen and the staff. Chip was a star!
Read moreIt would be incredibly stupid to award it with 4 stars, but when honest I do have a few points/remarks: too noisy to my liking, especially when out with friends having good conversations. Three out of four had a non-alcoholic arrangement and 1 low alcoholic. The facial expression made when ordering, was a negatively surprised one. It felt like alcohol was mandatory. That’s unnecessary. Also, the kitchen is plant based, not vegan. Leather shoes are worn and the coaster under the plate was of woollen felt.

You’re not going here just for the food. It is the whole package that makes it a night to remember. Small restaurant with a kitchen right next to the tables. The many staff attent to every detail. The unusual ingredients are sourced locally and turned into small pieces of art. Each chef brings his own creation to the table and tells about it.

A culinary journey - Edit
The amount of effort and creativity that goes into these dishes can be clearly seen in this award-winning restaurant. The food is not only beautiful to look at but was flavourful too. The unique pairing of ingredients (such as seaweed in the dessert course and kombucha scoby as a pate) takes the guest on a culinary journey you rarely get to experience in vegan dining. Some of these dishes took days to make, like the radish course which ended up with a lamb-like meaty texture.
Read moreOne course though was very salty and generally, there is a lot of oil and fat used in fine dining cuisine which is probably one reason you feel full after eating teeny portions (that and all the water you drink to combat the saltiness of the food). We drank 2 liters of sparkling water during the meal. Having eaten at a few fine dining restaurants now, this seems to be pretty normal though.
The staff were super friendly and happy to explain the process and ingredients of the dishes. We were even invited to have a look at the private dining area which is also their 'lab' where a variety of ingredients are stored in glass jars and containers, and where staff plan and create new dishes.
The main 'cons' are related to price: the non-alcoholic pairing is the same price as the alcoholic one (€95!!) and the wine pours are very small for what you pay. I would have loved it if the water (€7) was included in the price given we already paid €195 each, but other than that, it was overall a memorable experience.
Note that the restaurant is booked months in advance. Reservations open up a few times a year (I think every 3 months?) but if you are looking for a last minute table, join the Facebook page for the restaurant and they will post if there has been a cancellation. We were lucky to get one of these cancelled reservations for the following week.

It’s not easy getting a reservation but it was worth waiting this long. Exceptional dishes, original ingredients and flavours. A relaxed vibe, especially considering the restaurant has two Michelin stars. You can see the 11 cooks at work in the open kitchen.

It's great food and a great experience, if you like fine dining and learning about what you're eating. The drinks pairing was also fantastic, including a beer brewed with wine grapes and a nonalcoholic botanical drink as well as wines.

4.9 Ik zou bijna niet weten hoe dit beter kan. Als ik aan anderen uitleg waarom ik dit soort restaurants het geld waard vind dan vertel ik anderen dat ik van de ervaring geniet. Er wordt op de details gelet, de ervaring is compleet. Het personeel neemt de tijd en heeft aandacht. Je kan met iedereen praten. Ga het vooral zelf ervaren!
Read moreAls ik iets moet bedenken dat beter kan is het iets meer ruimte in het restaurant. Maar laat me duidelijk zijn, het is hier werkelijk fantastisch. Een van de duurste restaurants waar je kan eten, maar ook absoluut een van de beste. Je moet meestal ver van tevoren reserveren, maar het kan ook zomaar zo zijn dat er een paar uur van tevoren een tafeltje vrijkomt vanwege iemand die zich ziek meldt.

Of course the food is amazing and it's amazing to see so many non-vegans in an expensive place. But the service also really shines, the atmosphere is very comfortable and relaxed.

Read moreThe vegan version of the 3rd course did not fit the flow of meals and did not fit the drinks-pairing. The non vegan option was very different and did fit the drinks and the flow with previous dishes. The vegan option was very mild and light and seemed a lot like the first starter flavour-wise.
When this was pointed out politely, the staff was rude and claimed i did not know what i was talking about. For that price i expect better service. With that behaviour we will not come here again.
Note: if you have non-food allergens, it is worth mentioning this here. I did not think to mention i am allergic to spruce trees, but spruce was made into a dish.

As this is the first plant based restaurant in the Netherlands with Michelin stars I really wanted to go! The dishes were really surprising and flavourful. Our table looked right in the kitchen and it was amazing to see how much effort was put in every single plate. So much passion, so calm and so skilled. I loved that the staff was able to be themselves as they were serving us. They made jokes and really took their time with us. It’s not your daytoday Michelin star restaurant which for me was a very big plus! It had karakter. I loved it! It felt very personal and informal.

Read moreMy one favourite thing was the butter they’ve developed. If this ever gets commercialised (please), I would probably eat a about kilogram per week. There didn’t seem to be a limit to the amount of bread and butter one can get served but I had to cut myself off after a while to save space for the remaining dishes.

Als liefhebber van eten en goed uiteten, heb ik verschillende gerechten gegeten. Maar wat ik bij de Nieuwe Winkel heb ervaren is ongeëvenaard. Ik kan het werkelijk met geen eerdere ervaring vergelijken. De smaken en structuren zijn keer op keer verrassend. Ze worden begeleid door perfect gekozen dranken. Het is nu een week geleden en ik geniet nog steeds na. Ook de mensen zijn geweldig!

My best experience up until now - Edit
We had dinner here last Saturday. You have to book several months in advance, but it's well worth the wait. What delicious flavour explosions and great surprises on your plate. This restaurant is definitely worth its stars. The staff are super friendly, professional and make everyone feel at home here. I can really recommend a visit to this restaurant to everyone!
